This recipe was really easy to make as well as delicious and satisfing. To save time combine all dry ingredients in a pot the night before and all we ingredients in a covered bowl. In the morning combine and enjoy!!
Pumpkin Oatmeal – makes 4 large servings
2 cups of rolled oats
4 cups of water
1/3 cup of raisins
1/4 cup dried cranberries
1 cup canned pumpkin
2 tablespoons agave nectar
4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon vanilla extract
Combine all ingredients in a pot and cook over medium heat until liquid is mostly absorbed, stirring as needed. We like ours with a bit of soy or nut milk over top. Enjoy!
