Spiced Chia Pudding
Chia seeds are an ancient food dating back to Aztec times, that are making a comeback due to their superior nutrient profile, with significant amounts of essential fatty acids, fiber, protein and minerals – just 1 heaping tablespoon has 10% of your daily iron and calcium – that’s impressive! The pudding has a texture reminiscent of very small tapioca and is made with fresh raw almond milk.
1 cup raw almonds, soaked 4 hours
4 cups water
8 fresh dates, pitted
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1 tablespoon honey
3/4 cup raisins
3/4 cup chia seeds
Maple syrup or coconut sugar
1. Rinse and drain almonds. Blend almonds with fresh water, dates, spices and honey for about 1 minute. Pour through a fine strainer, cheesecloth or a nut milk bag, extracting as much milk as possible.
2. Place milk in a medium sized bowl and add raisins and chia. Let sit for 2 to 3 hours at room temperature, stirring every 1/2 hour or so. Chia seeds and raisins will absorb the liquid and create a thick pudding.
3. Serve with a splash of maple syrup or a sprinkle of coconut sugar.
