Recipe of the Week – Strawberry Oatmeal Pumpkin Muffins (Vegan Option)

                                 Strawberry Oatmeal Pumpkin Muffins (Vegan Option)
                                               makes 12 servings

1 cup & 1 tbsp spelt or whole wheat flour
2 tsp baking powder
1/4 tsp baking soda
1 1/4 pumpkin pie spice (I use cinnamon, nutmeg & allspice)
1 cup pumpkin, puree
1 tsp vanilla extract
1/2 & 1/3 cup natural honey*
1/4 cup soy milk
1/4 cup & 1 tbsp coconut oil
1 cup rolled oats
1/2 cup & 3 tbsp green pumpkin seeds
1 cup sliced strawberries

1. Preheat oven to 425 & prepare muffin tins by lightly greasing them.

2. Combine all dry ingredients in a large mixing bowl. 

3. Combine all wet ingredients, except strawberries in a medium mixing bowl and then add to dry       ingredients. 

4. Fold in strawberries.

5.  Fill muffin cups to about 3/4 full and then bake for 20 – 23 minutes.

These muffins were an experiment and they turned out really yummy. 

*You could make this recipe vegan by subsituting the honey with something like pure maple syrup or agave nectar.
